Chick Pea Flour Pancakes (Pudla)

Ingredients

Makes 4- 6 servings

2 cup (200g) chick pea flour    

2 tbs fresh coriander or parsley

½ cup (50g) flour

1¼ cups (300ml) water

1 green chili

2 medium tomatoes, chopped

Butter or Ghee for frying

1/4  tsp turmeric

1/2 tsp salt

1/4 tsp pepper

1 tsp coriander powder

Procedure

  • In a large bowl, mix together the flour and dry ingredients. Add water slowly, stirring as you do, until you have a thick batter. Adding tomatoes will make it thinner.

  • Now stir in tomatoes and the grated ginger.

  • Heat up pan on medium heat with Ghee or butter (10-12 inch).

  • Pour enough batter to make 4-5 inch pancakes. (Thickness is more important than shape).

  • Cook slowly on both sides until golden brown (4-5 mins)

  • Serve with Lemon Juice

  • Goes nice with cooked or quick cooking vegetable like potatoes or carrot
