Puy Lentil Soup

Ingredients

Makes 6 servings

2 cups puy lentils, (400g)

1-2 tbs ghee or vegetable oil

1 stalk celery, chopped (optional)

2 medium carrots, diced

3 tomatoes (skin removed and chopped)

6 cups water

1/2 cup chopped fresh parsley

2 tablespoons thyme

2 tablespoons oregano

2 bay leaves

salt and pepper

Procedure

  • Heat ghee or oil in a big saucepan until hot, add the celery and stir for 5 minutes. Add the lentils, stir together well, cover with the water.
  • Bring to boil, let it simmer for 1/2 hour or until the lentils are soft but intact.
  • Add the tomatoes and bay leaves; continue simmering until the lentils are completely soft.
  • Heat saucepan on medium heat, add ghee, cinnamon, cloves, cardamom, peppercorns and bay leaves.

  • Season to taste and add the dried herbs and the parsley. Stir well.
