| Semolina Halva (sweet) |
|
Ingredients
Ghee – 1/3 cup or 125g butter
Semolina or farina – 1 cup
Milk – 4 cups
Raw Sugar – 1 cup
Cardamom fresh ground seeds – 6 to 8 pods
Cashew nuts – 8 to 10
Saffron – 1 pinch
Raisins – 1tbs
Procedure
- Melt the ghee or butter in a heavy bottom stainless steel pan or wok.
- Add semolina and roast in ghee until it is slightly darkened, 5 to 7 minutes.
- Slowly stir in the preboiled milk. Cover and cook for 2 to 3 minutes. When the mixture is steamed well, add Raw Sugar. Mix well. Again cover until very thick, stirring in between.
- Add Cardamom powder (freshly ground seeds taken from pods), pieces of cashew nuts, raisins and saffron added milk. Cover and simmer for 2 minutes.
- Mound on a plate and serve warm garnishing with 1-2 saffron threads and cut cashew pieces.
